If you'd like to add a savory kick, chili powder is the way to go. You can elevate any salty rim with a hit of fresh zest or even chili powder. Swirl the glass and use your fingers to bring the salt up to the edges, gently pressing it against the outer edge of the glass. Then, turn the glass over and press onto the salt. Run the slit of the lime wedge along the rim of the glass, making sure to get it really wet. Place the lime flat-side down and cut it into 2-3 wedges, depending on the size of the lime. Have ready a small plate topped with about ⅓ cup of Kosher salt, and shimmy slightly to spread out the salt.Ĭut the lime in half lengthwise, then cut a line through the center of the lime crosswise. Swirl the rim of your glass in the salt until coated.Run the lime along the rim of your glass. All you need is a little citrus juice and Kosher salt. Luckily, you won't need either of these to add a salt rim to your cocktail glass. More times than not, what has saturated that foam padding is some form of processed, bottled lime juice, which both moistens the rim of the glass and adds a certain element of stickiness to it. The bartender dips the rim of the glass onto the foam padding and then takes it for a swirl in either salt or sugar, depending on your preference. It's likely at some point you've noticed those three-tiered salt and sugar keepers equipped with the foam padding behind the bar. If you'd like to go a totally different route, try adding a Sugar Rim instead! WHAT YOU'LL NEED: This, in combination with larger crystal size and coarse texture, makes Kosher salt the clear winner when it comes to choosing the salt for your Margarita salt rim. Unlike table salt, it does not have any additives and therefore has a cleaner, lighter taste. Kosher Salt | Kosher salt can come from either salt mines or straight from the sea. You can get fine and coarse sea salt, however, the flakes of coarse sea salt are often "rocky" in size and texture, making it less than ideal for your margarita glass. Sea Salt | Sea salt is made from drying saltwater into crystals and is the least refined of all the salts, retaining many other trace minerals in addition to just the salt. The tiny size of the crystal and pungency of table salt makes it entirely unusable for salting the rim of your margarita glass. This process strips the salt of additional minerals and fortifies it with iodine, which results in a more sharp and bitter product. Table Salt | Most table salt is obtained from salt mines and undergoes a thorough refining process. Looking to add some more bartending skills to your repertoire? These are your ciabattas or some pizza doughs. The dough is easy to shape and the gluten strands hold the shape tautly.Īnything above 85% is going to be tricky to shape. When you’re working with all-purpose flour, a 66% hydration dough is going to be your standard sandwich bread, with a tight crumb and small holes. Ok, sure, but what does it mean that your bread has 66% hydration? What does that look like? ![]() Here’s a little secret: you can go up or down twenty or so grams of flour or water from the exact ratio weights and your dough will be just fine. So to compensate, you would need to add 333g of water (give or take there’s no need to measure to the decimal level with grams) If you accidentally added 500g of flour, you just need to solve for the amount of water. Let’s say you want your bread to have a 66% hydration level. I think I’ll just use this picture from now on to warn readers that bread math is coming up. And even better, it’s a snap to compensate for the mistake using a simple equation. With a scale, if you’ve been zeroing out between each ingredient, then you know exactly how much you added. How would you know how much water or flour you had added? You could try to scoop out some of the extra, but you still don’t really know how to fix it for certain. You can pour too much of this or that, and if you were using volume measurements, you would be stuck. Sometimes, when you measure out ingredients by weight into the same bowl, accidents can happen. I REPEAT: IF YOU MAKE A MISTAKE, IT IS EASY TO CORRECT. Volume measurements are easy to double or triple, but if you want to make a single loaf slightly bigger, you are out of luck.Ģ) If you make a mistake, it is easy to correct. What is so awesome about baker’s percentages?ġ) If you know the hydration of the dough you want, it is easy to scale up or down depending on the number of loaves or the size loaves you want to make. A low hydration dough is easier to handle than a high hydration dough. Hydration can affect the pliability of your dough and how easily you are able to handle the gluten strands to shape the bread into a nice shape for baking. My usual go-to bread, that I can make with my eyes closed, calls for 375g of flour and 250g of water. So for every 100g of flour, for example, your recipe might call for 66-100g of water. Workable hydration levels for bread fall between about 66% and 100% hydration. The hydration level tells you the percentage of water in relation to the flour. In a baker’s ratio, the flour is always the 1 in the ratio. It also depends on the type of flour you want to use (more on that in a second). It depends on what type of bread you want to make. But we might be getting ahead of ourselves.įirst, what is a good ratio of flour to water? Having a kitchen scale also makes calculating hydration easy. Just zero out your scale after each ingredient. You only have one unit of measurement, grams or ounces (whichever you prefer), instead of having to convert spoons to cups, or milliliters, or fluid ounces. When you measure it by weight, however, it is always the exact amount regardless of these interfering factors.Īlso, measuring ingredients by weight means you can measure everything into one bowl, instead of getting every spoon and cup in your drawer dirty. How you scoop the flour, whether you sift it first, the humidity in the air, etc. When you measure flour by volume, so many things can throw off an accurate measurement. Because you can measure ingredients more accurately with a scale, measuring them by weight, than you can by measuring their volume. ![]() ![]() ![]() ![]() I’ve also cleaned my rose quartz by holding it under running water, smudging it, and by placing it on a windowsill in the moonlight.ĭon’t you hate it when you ‘feel’ something but then dismiss what you are feeling because there is no scientific evidence to prove it?
